On this special date, why not pamper your mother with a special meal?

Surprise her with a traditional Mexican breakfast she will like a lot! The Chilaquiles is an easy dish you can make, here is the recipe:



Ingredients:

  • 12 corn tortillas.

  • 3 tablespoons of chopped cilantro.

  • 1 cup of chicken broth.

  • 1 piece of cooked, skinless, boneless chicken breast, cut in stripes.

  • 10 green tomatoes (A.K.A. tomatillos, big ones).

  • 1 garlic clove.

  • 3 green serrano chiles.

  • ½ white onion.

  • Shredded Cheddar cheese (or any other cheese you like that melts easily).

  • Cooking oil.

  • 1 teaspoon of Olive Oil.

  • Salt, pepper and chicken bouillon .



Cut the tortillas in squares or triangles and fried them until they get a golden color.

Boil the Tomatillos, Garlic, ¼ Onion and the 3 Chiles for about 10 minutes or until Tomatillos are soft and yellowish.

After they boil, blend all the ingredients until you get a green salsa.

Pour the salsa in a deep skillet which has to be previously heated with a teaspoon of olive oil, add the chicken broth, salt, pepper and the chicken bouillon and cook for 10 to 15 minutes.

When it's ready, take it out from the stove and add the chopped cilantro

In a bowl, mix the tortillas with the chicken and the salsa, then put everything in a baking dish, add the rest of the onion on the top, make sure you chop it very well, add the cheese and bake it for around 20 minutes in the oven at 250 degrees.
